Basic beef jerky


2 lb beef, flank steak* (or other very lean cut)
1/3 cup soy sauce
1 garlic clove, crushed
1/8 tsp salt
1/8 tsp pepper, black

How to prepare

Slice flank steak lengthwise with the grain into 1/4″ thick strips about 1 to 1 1/2″ wide and as long as you want. Combine soy sauce, garlic, salt and pepper. Marinade the beef strips in the liquid about 20 minutes. Drain the meat strips and arrange them in a single layer on a rack set in a shallow baking pan. Bake in a very slow oven (150
