Apple glazed cornish game hens


Marinade 8888
2 cups apple juice concentrate
1/4 cup honey
1/4 cup cider vinegar
1/4 cup dijon mustard
3 tbsp vegetable oil
1 tbsp soy sauce
1 tbsp dried tarragon
1 tsp paprika
1/2 tsp pepper

2 tart green apples, quartered
6 tbsp raisins
6 green onions, each cut into thirds
6 celery stalks, each cut into thirds
3 sm. Cinnamon sticks, broke in half
6 cornish game hens
fresh tarragon sprigs

How to prepare

For marinade: combine thawed apple juice concentrate and honey in heavy saucepan. Stir over low heat until honey dissolves, about 3 minutes. Mix in vinegar, dijon mustard, vegetable oil, soy sauce, chopped tarragon, paprika and pepper.
For hens: stuff 1 apple piece, 1 tbsp raisins, 3 green onion pieces. 3 celery pieces and cinnamon stick into cavity of each hen. Tie legs of each hen together to hold shape. Place hens in large baking dish. Pour marinade over. Refrigerate for at least 2 hours or overnight, turning occasionally. Preheat oven to 350
