Golden mushroom chicken thighs

Ingredients

6 chicken thighs
1 can golden mushroom soup

How to prepare

Pull the skin off the thighs. Rinse in cold water. Put in crockpot. Pour in one can of golden mushroom soup and 1 can water. Cook on high at least 4 hours or until chicken falls off bones. Remove bones. Yield: 3 servings

Htipiti – feta cheese spread

Ingredients

1/2 lb feta
3 tbsp olive oil
1 med italian pepper seeded & finely chopped
1 pickled green pepper seeded and chopped
2 tsp oregano

Pepper to taste
1/2 lemon; strained juice only
black olive; for garnish

How to prepare

In medium-size bowl, mash feta with fork or potato masher and slowly add olive oil, chopped peppers, oregano, and black pepper. Pulverize mixture for about 10 minutes (less if using a food processor), pouring in lemon juice a little at a time, until feta is creamy. Cover and refrigerate at least 1 hour before serving. Yields about 1 cup.

Pizza crust

Ingredients

1 1/4 cup flour
1/4 cup flour
1 pkg red star quick rise yeast
1/2 cup water, warm
1 tbsp sugar
1 tbsp olive oil
1 tbsp garlic salt

2 tbsp parmesan cheese

How to prepare

In small dish, combine sugar, yeast and with the water. Let sit in warm place for 5 minutes. In large mixing bowl, combine 1 1/4 cup flour, yeast mixture, salt and olive oil. Mix. Take dough out of bowl and place on a floured surface. Dough will be sticky, so up to 1/4 cup more flour may be used during the kneading process (be careful not to use too much flour or pizza crust will be very heavy in texture). Knead for 5 minutes. Put ball of dough in a oiled bowl, cover and let sit in warm place for 1 to 1 1/2 hours. Put dough on floured surface and roll to desired thickness and place on greased pizza pan. Add your favorite sauce and toppings and bake at 450 for 15 – 20 minutes.

Meat dumplings

Ingredients

1 egg
1/2 cup water
2 tbsp mashed potatoes (optional)
1/2 tsp salt
2 cups flour
Meat filling
1 small onion
3 tbsp butter
chopped cooked beef
chopped mushrooms, cooked (optional)
salt & pepper

How to prepare

Mound flour on kneading board. Beat egg with water and salt slightly and carefully pour into mound of flour. Mix and add the mashed potatoes. Knead until dough becomes elastic. Cover closely with warm bowl and let stand about 10 minutes. For easier handling, divide the dough in half. Roll our very thing, cut in 2″ squares.
Run cooked beef through grinder. Chop onion fine and lightly brown in butter. Add chopped mushrooms and fry very slowly. Add meat and seasoning. Cool before using.
Place half tsp of filling a little to one side on each squares. Moisten edge with water. Fold over and press edges together. Join the two upper corners. Drop into salted boiling water and cook until they float to top.
