Nuoc cham ( vietnamese hot sauce )

Ingredients

1 garlic clove minced
1/4 tsp pepper flakes red, crushed
2 tbsp fish sauce
2 tsp sugar
1 tsp lime peel minced
2 tsp lime juice
3 tbsp water

How to prepare

Increase the amount of red pepper flakes to suit taste. Combine garlic, lime peel, and red pepper flakes then add lime juice, fish sauce, water, and sugar. Whisk until all ingredients are blended and sugar is dissolved. Makes about 1/3 cup. Will keep short periods if refrigerated. Yield: 12 servings.

Thai fried noodles – pad thai

Ingredients

1/2 cup vegetable oil
6 cloves garlic, finely chopped
1 cup small cooked shrimp
1 tbsp granulated sugar
3 tbsp fish sauce (nam pla)
1-1/2 tbsp tomato ketchup
2 eggs, beaten

3/4 lb (about 3 hanks) rice vermicelli (sen mee), soaked in hot water 15 minutes and drained
1 cup bean sprouts

garnish:
1 tbsp dried shrimp powder

2 tbsp peanuts, coarsely ground
1/2 tsp dried red chili flakes
2 green onions, finely chopped
2 tbsp coriander (cilantro) leaves, chopped
2 limes, sliced into 1/8″ circles

How to prepare

Heat oil in a wok and fry garlic until golden. Quickly add shrimp, stir-fry until heated through. Add sugar, fish sauce and ketchup, stir until sugar dissolves. Add beaten eggs, letting them set slightly, then stir to scramble. Add noodles and toss and stir about 2 minutes. Reserving about 4 tbsp of bean sprouts, add remainder to the wok. Stir over heat until bean sprouts are barely cooked. Turn pad thai onto a platter, placing reserved, raw bean sprouts on one side. Sprinkle noodles with garnish ingredients in following order: shrimp powder, peanuts, chili flakes, green onions, coriander leaves. Ring platter with the lime slices and serve. 4 servings.

The fish sauce, rice noodles and shrimp powder should be available at southeast asian markets (in vietnamese markets fish sauce goes by the name nuoc nam, avoid the kind from the philippines).

Beef moussaka

Ingredients

1 1/2 lb ground beef
1 medium onion, chopped
2 tbsp snipped parsley
1 tsp salt
1/4 tsp pepper
1/8 tsp nutmeg
1 can tomato sauce (8oz)

1/4 cup dry red wine
1 medium eggplant
1 eggs
3/4 cup milk
1/2 tsp salt
1/3 cup grated parmesan cheese

How to prepare

Heat oven to 375′. Cook and stir meat and onion in large skillet until meat is brown. Drain off fat. Stir in parsley, 1 tsp salt, the pepper, nutmeg, tomato sauce and wine; heat to boiling. Reduce heat and simmer uncovered 5 minutes. Pare eggplant and cut into 1/2″ slices. Arrange half the eggplant slices in ungreased baking dish, 11 3/4×7 1/2×1 3/4″; top with remaining eggplant slices and meat mixture. Cover with aluminum foil and bake until eggplant is tender, about 40 minutes. Beat eggs, milk and 1/2 tsp salt; pour over hot casserole and sprinkle with cheese. Bake uncovered until custard is set, 10 to 15 minutes. Cool 10 minutes, then cut into squares.

Frittata Verde

Ingredients

3/4 ouncedried porcini mushrooms
2 cups water
1 poundspinach leaves
2 eggs
3 egg whites
3 tablespoons grated Parmesan cheese – divided
2 tablespoons Chablis or other dry white wine
1 tablespoongreen onions – thinly sliced
1/4 teaspoon black pepper
1/8 teaspoon salt
1/8 teaspoon ground nutmeg
1 teaspoon ground red pepper
Vegetable cooking spray
1 cup onion – finely chopped
1 largegarlic clove
1/2 teaspoon dried basil
1/4 teaspoon dried oregano

How to prepare

Combine dried mushrooms and 2 cups of water in a saucepan, and bring to a boil; remove from heat. Cover and let stand 30 minutes. Drain; chop mushrooms, and set aside Remove stems from spinach, and wash leaves thoroughly. Place spinach in a large Dutch over; cover with water, and bring to a boil. Cover, reduce heat, and simmer 25 minutes; drain well. Finely chop spinach, and set aside Combine eggs and egg whites in a large bowl; stir with a wire whisk. Stir in spinach, 2 tablespoons cheese, wine, and next 5 ingredients; set aside Coat an 8-inch nonstick skillet with cooking spray; place over medium heat until hot. Add onion; saute 3 minutes. Add garlic; saute 1 minute. Add mushrooms, basil, and oregano; saute 1 minute. Stir onion mixture into spinach mixture Recoat skillet with cooking spray. Pout spinach mixture into skillet, and place over medium-low heat; cover and cook 12 minutes or until almost set Top with remaining tablespoon cheese. Wrap handle of skillet with foil,
and broil 6 inches from heat 3 minutes or until cheese melts

Substitute 1 cup sliced fresh mushrooms for dried porcini mushrooms,
if desired. Instead of boiling mushrooms, coat a nonstick skillet with

Chinese salmon

Ingredients

1 lb salmon fillets, skinned, boned, and cut into strips
3 spring onions chopped
1 cube chopped ginger
1 chopped green chili
black pepper to taste
Marinade:
1 egg
1 tbsp cornflour
1 glass water
1 glass sherry or white wine
2 tbsp chili and garlic sauce (heinz makes a bottled one)
dash of sesame oil

Dash of soy sauce

How to prepare

Marinade for 30 minutes in the marinade mixture. Remove from the marinade and stir fry with vegetables.
When the salmon is cooked, add soy sauce to taste and serve.

A Texas Breakfast Casserole

Ingredients

1 Can Crescent Rolls
1 Pound Sausage – cooked and drained
Fresh Mushrooms – sliced
3/4 Pound Monterey Jack Cheese – grated
6 Eggs – beaten
1 Can Cream Of Onion Soup

How to prepare

Line a 13×9 inch Pyrex dish with rolls, sealing perforations. Cover with
sausage, mushrooms and half the cheese. Mix eggs with soup and pour over casserole. Sprinkle remaining cheese on top. Chill overnight. Bake at 350 for 1 hour. Note: For variation, you can use cooked, crumbled bacon or bite-sized pieces of ham instead of sausage.

Hot horseradish sauce

Ingredients

1/2 cup fine cracker crumbs
1/2 cup grated fresh horseradish
1-1/2 cups milk
3 tbsp butter
salt & pepper
lemon juice

How to prepare

Mix the crumbs, horseradish and milk in the top of a double boiler. Let the mixture stand for a couple of hours. Cook 20 to 25 minutes over boiling water, stirring now and then. Blend in the butter and salt and pepper. A little lemon juice may be added if you like.
