English country house lemon curd

Ingredients

6 tbsp unsalted butter, cut up
6 tbsp sugar
3 lg egg yolks
3 tbsp freshly squeezed lemon juice

How to prepare

Combine ingredients in the top of a double boiler, or use an earthenware bowl placed Over (but not touching) simmering water cook, stirring, until mixture thickens and Coats the back of a spoon, 6 or 7 minutes pour through a fine mesh strainer into a Sterilized glass jar cover airtight and refrigerate when cold (mixture will thicken As it cools) use within 4 weeks makes approximately 1 cup.

Apple Butter

Ingredients

10 lbs tart apples
5 cups apple juice or cider
4 cups sugar
4 tsp cinnamon
1-1/2 tsp cloves
2 tsp allspice
1 tsp nutmeg
1/2 tsp salt

How to prepare

Combine apples and cider in lg pan and make apple sauce (may need a little more liquid, add water). Add remaining ingredients to sauce, mix. Put into crockpot for 12 hours on low. Store in sterile jars. Refrigerate or freeze for extended storage.

Lime-chipotle sauce

Ingredients

1/2 cup honey
2 tbsp minced canned chipotles adobados
3 tbsp brown or dijon mustard
1/2 cup lime juice
1 1/2 tbsp minced garlic
1 tsp ground cumin
1/2 tsp ground allspice
1/2 cup chopped fresh cilantro
Salt & freshly ground black pepper

How to prepare

Mix all ingredients together. Makes 1 1/2 cups.

Dolly’s peach cobbler

Ingredients

1 pie crust; for deep dish pie
4 cup peach, fresh; sliced
1 cup sugar
3 tsp flour
Butter
1/2 cup water, boiling

How to prepare

Mix all ingredients except boiling water. Turn mixture into the pie crust and level, adding strips of left-over pie dough to make an informal lattice work on top. Place ‘pats’ of butter over top of crust. Pour boiling water over the top of all. Bake at 350 f. For about 50 minutes. Yield: 10 servings.

Strawberry Pie

Ingredients

1 cup sugar
1 cup water
6 tsp cornstarch
3 oz strawberry Jell-O
1 pint to 1 qt washed and hulled strawberries
9″ baked and cooled pie shell

How to prepare

Bring sugar, water and cornstarch to a boil over med high heat. Add Jell-O, stir until dissolved. Cool and then add strawberries. Refrigerate about 45 min or until it starts to congeal. Put in pie shell and cool completely. Top whip whipped cream or ice cream to serve.

Pear Relish

Ingredients

1 gallon pears
1 tsp ground cloves
1/2 gallon onions
4 lb sugar (8 cups)
12 green bell peppers
1 qt vinegar
12 red bell peppers
1 tbsp celery seed
1/2 cup salt (or less)
2 tbsp mustard seed
1 tsp dry mustard
2 tbsp turmeric

How to prepare

Grind pears, onions and bell peppers. Drain well in colander. Add remaining ingredients to drained mixture and bring to a boil. Boil 7 min.. Place in hot sterilized jars and seal while hot. Makes 18 pints.
