English country house lemon curd

Ingredients

6 tbsp unsalted butter, cut up
6 tbsp sugar
3 lg egg yolks
3 tbsp freshly squeezed lemon juice

How to prepare

Combine ingredients in the top of a double boiler, or use an earthenware bowl placed Over (but not touching) simmering water cook, stirring, until mixture thickens and Coats the back of a spoon, 6 or 7 minutes pour through a fine mesh strainer into a Sterilized glass jar cover airtight and refrigerate when cold (mixture will thicken As it cools) use within 4 weeks makes approximately 1 cup.

New Zealand Scones

Ingredients

4 cup self-raising flour
1 can of seven up
1 1/2 cups cream

How to prepare

Combine ingredients, and cut them with a knife until just mixed. The seven-up will make the mixture frothy, but will disappear after mixing. Plop muffin sized pieces of dough on a non-stick cookie sheet, and pat down the top. Consistency will be sticky. Bake until golden brown for 12 minutes at 220C or 425 F. Yep, that’s right – 425 F. The seven up makes them feather light.

Currant scones

Ingredients

2 cups flour
1 egg yolk
4 tbsp butter
1/3 cup sugar
3/4 cup currants
2 tbsp cold water
2 tsp baking powder

1 tsp salt

How to prepare

Preheat oven to 350f. Lightly coat a baking sheet with baking spray. Sift first 4 ingredients together, then cut butter into it until mixture is crumbly. Beat together milk & egg. Pour into dry ingredients. Stir well. Add the currants. Mix well.

Prepare a floured flat surface. Dough will be wet. Knead on prepared surface and pat the dough till @ 3/4″ thickness. Cut out scones with 21/2″ biscuit cutter (or a drinking glass rim) and place on baking sheet.

Beat yolk with cold water. Using pastry brush, glaze each scone. Bake 25-30 minutes. Serve hot or cold, with butter or clotted cream & jam.

Cranberry tea scones

Ingredients

2 cups plus 2 tbsp all-purpose flour 3 tbsp sugar
1 1/2 tsp baking powder
1/4 tsp salt
1/4 cup butter, cut into small pieces and chilled
1/2 cup cranberries
1/2 cup skim milk
1 egg, lightly beaten

How to prepare

Combine 2 cups flour and next 3 ingredients in a bowl; cut in butter with a pastry blender until mixture resembles coarse meal. Stir in currants. Stir in milk and egg, forming a soft dough. On a lightly floured surface, knead dough gently 12 times, adding remaining 2 tbsp flour to prevent dough from sticking. Roll dough into a 12″x 8″ rectangle; cut into quarters. Cut each quarter diagonally twice to make 4 triangles. Place scones on an ungreased baking sheet. Bake at 425
