Ethiopian-style broiled drumsticks

Ingredients

1/2 tsp ground ginger
1/2 tsp cardamom, ground
1 tsp coriander, ground
1/2 tbsp turmeric, ground
1/2 tbsp mustard, ground
1/2 tsp fenugreek seeds, crushed
1/2 tsp nutmeg, ground
1/2 tsp cinnamon, ground
1/2 tsp allspice, ground
2 tbsp cayenne pepper
1 dried cayenne chile pepper – seeded/minced
1/4 cup paprika
1 1/2 tsp salt

1 1/2 tsp black pepper, ground
1/4 cup dry red wine
2 tbsp peanut oil
2 tbsp orange juice
12 chicken drumsticks

How to prepare

For the spice paste, mix first 12 ingredients plus salt and pepper in a small skillet; cook over low heat, stirring constantly to form a smooth paste, about 2 minutes. Off heat, stir in oil and orange juice. Rub each drumstick evenly with this spice paste, then transfer them to a large nonreactive bowl; cover and refrigerate 2 hours. (can be refrigerated overnight.)
Heat the broiler. Transfer drumsticks to a broiling pan. Broil drumsticks, turning once, until browned and cooked through, 20 to 25 minutes. Serve immediately. 4 servings

South African Bobotie

Ingredients

2 coarsely chopped onions
1 crushed clove garlic
3 tbsp butter
2 tbsp curry powder
1/2 cup shredded almonds
1/2 cup raisins
1 tsp mixed herbs
juice of 1/2 lemon
1 tsp salt
1 tbsp sugar
1 tbsp vinegar
1/8 tsp ground black pepper
2 lbs ground beef or lamb
3 thick slices white bread
1 and 1/4 cup milk
2 eggs

How to prepare

Fry the onion and garlic in the butter. When the onions are golden brown, transfer to a large mixing bowl. Add the curry powder, almonds, raisins, mixed herbs, lemon juice, salt, sugar, vinegar, pepper and ground meat. Mix well.
Soak the bread in 1 and 1/4 cup milk. Squeeze out the bread, reserving the milk. Mix the bread and 1 egg into the meat mixture. Put the mixture into a well buttered pie pan. Beat the reserved milk (about 3/4 c.) with 1 egg and pour over the meat mix. Bake in a 350-degree oven for 1 hour, or until the mixture is set and top is lightly browned. serves 4

Prawns piri-piri

Ingredients

1 1/2 lb of large shrimp
3 limes
1 stick of butter
4 tsp paprika
4 large cloves garlic
4 to 8 dried red chilies

How to prepare

Split the shrimp down the back but leave the shell on. Remove the vein and clean. Put the shrimp in a bowl and squeeze the limes over the shrimp. Let the shrimp marinade in the lime juice for at least 4 hours.
About half an hour before you want to cook the shrimp prepare the piri-piri (means hot in swahili) butter. This can be used for fish and steak as well as for the shrimp. Melt the butter in a small pan and add the chopped garlic, the paprika and the chilies. Cook gently for 15 minutes and set aside.
About 10 minutes before serving time drain the shrimp, thread the shrimp on a bamboo skewer and spoon some piri-piri butter into the back of each shrimp.
Grill the shrimp on the bar-b-que or under the griddle until firm.
